Instructions:1. Line an 8x8 inch pan with parchment paper 2. To make date paste, blend dates with water in a food processor until combined. Set aside 3. In a pot, melt nut butter and coconut oil over medium-heat until the mixture has thinned out, stirring constantly. Lower the heat and simmer for about 2 minutes 4. Add date paste, vanilla, cinnamon and salt to the pot and simmer for another 2 minutes or until mixture has combined. Fold in oats, chia seeds, shredded coconut, and chopped almonds.5. Transfer the mixture into the lined pan and spread out evenly with a spatula. Add chocolate chips on top and gently press into the mixture 6. Place the pan in the fridge for about 1 hour to set. When the mixture has hardened, remove from the pan, and slice into bars Store bars in fridge or freezer until ready to eat 7. Enjoy! |
