After settling into a small farm between Sylvan Lake and Red Deer, the Schalkwyk family was having a hard time finding good cheese. Instead of waiting around for one to arrive on their doorstep, they decided to go to work and make their own gouda using the cheese making skills they’d relied on in the Netherlands for over 30 years. Sixteen years later, Sylvan Star Cheese is renowned for its farm made gouda. They’re extra aged gouda, also known as “Grizzly” because of its powerful bite, is ranked #4 in the entire world. Because it tastes so gouda, their cheese has won numerous other awards. Today, Jeroen Schalkwyk runs the family farm, looking over a herd of about 240 Holstein’s. Meanwhile, the rest of the Schalkwyk’s use the dairy produced by these cows to continue to make delicious cheeses for you to enjoy.
